History on a Plate, the series which takes real recipes from Irish food history and puts them back on the menu. In this, the final programme in the series, we rediscover the lost arts of foraging and preserving. The programme is presented by Irish Times restaurant critic Catherine Cleary and historian Juliana Adelman. The contributors are: chefs Domini Kemp, Darina Allen and Trevor Moran; historian Patrick Walsh; seaweed expert Marie Power; and Clodagh Doyle Curator at the Museum of Country Life.
